The Jungle Bird is a tiki cocktail built from dark rum, the bitter Italian aperitif Campari, fresh pineapple and lime juice and a little sugar syrup, shaken and served over ice with a pineapple garnish. It is unusual among tropical drinks in pairing a rich, molasses-heavy rum with the bittersweet, herbal bite of Campari, so it reads less sweet and more grown-up than most tiki fare. Created at the Kuala Lumpur Hilton in the 1970s, it fell into obscurity for decades before being rediscovered by the craft-cocktail revival and is now regarded as a modern classic — a rare bridge between the tiki and the bitter-aperitif worlds. Deep amber-red and frothed by the shaken pineapple juice, it is fruity and refreshing but cut through by Campari's clean bitterness.
