Jerk seasoning is the fiery, fragrant Jamaican spice blend used to "jerk" meat — a marinade or dry rub built on allspice (called pimento in Jamaica) and Scotch bonnet chilli, sharpened with thyme, scallion, garlic, ginger and warm baking spices. It is at once smoky, sweet, herbal and searingly hot, and it gives jerk chicken and jerk pork their unmistakable dark, peppery crust.
