Edible jellyfish is a salt-and-alum-cured seafood made from the firm, cartilage-like bell and oral arms of several large coastal jellyfish. Eaten almost entirely for its texture rather than flavour, it is shredded into crisp, springy, faintly briny strands and dressed cold — a classic of Chinese and other East and Southeast Asian banquet and home cooking.
