Jarlsberg is a Norwegian semi-soft, part-skim cow's-milk cheese with a mild, buttery, distinctly sweet-nutty flavour and large, irregular round holes (eyes), in the manner of a Swiss Emmental. Pale yellow, smooth and supple, it slices and melts cleanly and is one of Norway's best-known food exports, sold around the world in yellow-wax-coated wheels.
