Jallab is a dark, sweet, floral fruit-syrup drink of the Levant, built on grape or date molasses (dibs) perfumed with rose water and traditionally given a faint smoky edge from Arabic incense. The thick syrup is diluted with cold water and poured over crushed ice, then crowned with floating pine nuts and golden raisins. The result is deep ruby to near-black, intensely sweet and aromatic, and entirely non-alcoholic. It is one of the signature cooling drinks of a Levantine summer and a fixture of the Ramadan iftar table across Lebanon, Syria, Palestine, Jordan and beyond.
