Jalebi (also spelt jilbi, jilapi, zulbia or, in the Arab world, zalabia) is a deep-fried sweet made by piping a fermented wheat-flour batter into interlocking coils, frying them crisp, and immediately soaking them in warm saffron-scented sugar syrup. The result is a bright-orange, pretzel-shaped spiral that is crunchy on the outside, syrup-soaked and juicy within, and eaten warm across South Asia, the Middle East and North Africa.
