Jaggery is a traditional unrefined sweetener of South and Southeast Asia, made by boiling down sugarcane juice (or palm sap) until it sets into a solid, golden-brown to dark caramel mass. Known as gur in Hindi-Urdu and by dozens of regional names, it keeps the molasses and trace minerals that refining strips out of white sugar, giving it a deep, rounded, almost smoky sweetness.
