Inulin is a soluble dietary fibre extracted from chicory root — a chain of fructose sugars the body cannot digest. Mildly sweet at best and flavourless at high purity, it dissolves into a smooth, fat-like creaminess that lets cooks cut fat and sugar while adding gut-friendly fibre. It is the workhorse "prebiotic fibre" behind many reduced-fat and high-fibre foods.
