Income Tax
The Income Tax is a Prohibition-era gin classic — gin, dry vermouth and sweet vermouth shaken with fresh orange juice and a couple of dashes of Angostura, then strained up into a stemmed glass. It is, quite simply, a Bronx with bitters: the same soft, dry, orange-brightened Perfect Martini given an aromatic spiced edge.

Herbal
Pale and faintly cloudy, the Income Tax smells first of fresh orange juice and the piny juniper and citrus-peel of gin, with a herbal, wine-like lift from the two vermouths and a warm, spiced curl of Angostura clove and cinnamon threading over the top. On the palate it is dry and aromatic more than sweet — bright orange fruit and a soft citrus tartness set against the crisp bite of dry vermouth and a rounding caramel edge from the sweet, all carried on a gin spine of juniper and dry spice and finished with the bitters' faint clove-and-cinnamon bitterness. It closes clean, gently bitter and dry, a shade more complex than the Bronx it comes from, gentler than a Martini at around 18 percent alcohol in the glass but unmistakably spirit-led.
