Iced coffee

Iced coffee is ordinary coffee brewed hot and then chilled and served cold over ice. Because it is extracted with hot water in the usual few minutes and only cooled afterwards, it keeps the bright, aromatic, gently acidic character of a hot cup rather than the rounded, low-acid profile of cold brew. It is one of the most ubiquitous ways to drink coffee in warm weather, taken black or lengthened with milk, cream, sugar or flavoured syrup, and it should not be confused with cold brew, which is steeped in cold water from the start.

Plain black iced coffee reads as clean, bright, roasted coffee served cold — recognisably the hot cup it came from, with the same fragrant, gently acidic, chocolatey-roasted character, only chilled. It keeps more brightness and aroma than cold brew: crisp and lively rather than rounded and mellow, with a moderate bitterness that the cold can make read a touch more sharply, and a clean, refreshing finish over ice with no crema or foam.
