Ice plant (Mesembryanthemum crystallinum), also called crystalline iceplant or common iceplant, is a low-growing succulent whose thick, spoon-shaped leaves are covered in large, glistening, water-filled bladder cells that look like tiny beads of ice or frost. Eaten raw, the cool, juicy, crunchy leaves burst with a clean saline-mineral bite and a faint lemony sourness, making them a striking salad green and garnish prized by chefs.
