Hyssop is a woody, semi-evergreen perennial herb of the mint family (Lamiaceae), native to southern Europe and the Middle East. Its narrow leaves and violet-blue flower spikes carry a sharp, minty-bitter, faintly camphorous aroma used in herbal teas, bitter liqueurs and, sparingly, in cooking.
