Horchata

Horchata is a family of sweet, milky-white plant drinks made by soaking, grinding and straining a starchy or nutty base — most famously rice in Mexico and tigernuts in Spain — into a cool, opaque liquid that is sweetened and, in its Mexican form, scented with cinnamon and vanilla. It is creamy even without dairy, though many Mexican cooks add milk; it is refreshingly cold, and one of the great non-alcoholic table drinks of the Hispanic world.

A cold glass of sweetened rice horchata reads first as warm Ceylon cinnamon and rounded vanilla over a soft, milky-creamy body, with a faint nutty edge from rice starch and any almond; the taste is frankly sweet with the barest savoury hint and a light, slightly starchy texture rather than true fat-richness.
