Clover honey is the pale, mild, everyday honey most North Americans picture when they think of "honey" — the all-purpose table and baking honey. Gathered by bees from the nectar of white and sweet clover (and usually alfalfa) across the northern plains, it runs from near-water-white to light amber, with a clean, gently floral sweetness and none of the malty, mineral heaviness of dark honeys. Because it is relatively rich in glucose, it granulates readily, setting to a fine, soft, spreadable grain over weeks to months.
These cues are Honey's, and hold across its varieties; where this one differs, its own page says so.
