Acacia honey is one of the palest and mildest of all monofloral honeys — a clear, water-white to pale-gold syrup gathered from the blossom of the black locust tree (Robinia pseudoacacia), confusingly nicknamed "acacia." Delicately floral, clean and softly sweet rather than assertive, it is a refined honey prized for sweetening tea, drizzling over fresh cheese and any use where a neutral sweetness is wanted. Its unusually high fructose content keeps it liquid and slow to crystallise far longer than most honeys.
