Hogfish (Lachnolaimus maximus) is a large, deep-bodied wrasse of the western Atlantic and Caribbean reefs, named for the long, pig-like snout it uses to root crabs, snails and clams out of the sand. Its lean, snow-white flesh is mild, clean and faintly sweet with a delicate flake, and it is widely regarded as one of the finest eating fish of Florida and the Caribbean.
