Hawaij (also spelled hawaij, hawayej or hawayij) is a Yemeni spice blend that exists in two distinct families: a savoury, turmeric-golden "soup" mix of cumin, black pepper, coriander, turmeric and cardamom used for stews and broths, and a sweeter "coffee" mix built on ginger, cardamom, cinnamon and cloves. Carried to Israel by Yemenite Jews in the mid-20th century, it became a staple of Yemeni-Israeli cooking and now flavours everything from long-simmered beef soups to spiced coffee and tea.
