Havarti is a Danish semi-soft, washed-curd cow's-milk cheese — pale, creamy and supple, with a buttery, gently sweet, faintly tangy flavour and a smooth, springy paste shot through with many tiny, irregular holes. Sold young in rindless blocks, it slices and melts cleanly and is a popular table, sandwich and snacking cheese.
