Hanky Panky

The Hanky Panky is a spirit-forward London classic — gin and sweet red vermouth lifted by a couple of dashes of Fernet-Branca, stirred over ice and strained up into a coupe with an orange-peel twist. A sweet-Martini variant given a minty, bitter, medicinal jolt by the Fernet, it is one of the signature creations of the American Bar at the Savoy Hotel.

Amber-red and glossy, the Hanky Panky opens with the aromatic minty-bitter, faintly medicinal waft of Fernet-Branca over the dry pine and juniper of gin and the vinous, herbal depth of sweet red vermouth, all lifted by fragrant orange oil from the twist. On the palate it is rounded and bittersweet — the sweet vermouth bringing soft caramel and dried-herb body, the gin a dry aromatic backbone, and the two dashes of Fernet a cooling menthol-and-bitter-root lift that lingers into a dry, herbal, faintly medicinal finish at around 24 percent alcohol in the glass.
