Halva is a dense, sweet confection eaten across the Middle East, the Balkans, the Caucasus, North Africa and South Asia. The best-known styles are a flaky, crumbly block made from ground sesame paste (tahini) bound with boiled sugar or honey, and a soft, fudge-like type cooked from semolina or flour fried in fat.
