Halloumi is a firm, springy, layered brined cheese from Cyprus, traditionally made from a blend of goat's and sheep's milk (often with cow's milk today). It is salty and squeaky, and famous for an unusually high melting point: it grills and pan-fries to a golden crust while holding its shape.
