Haddock (Melanogrammus aeglefinus) is a North Atlantic bottom-dwelling fish of the cod family (Gadidae), prized for its lean, mild, faintly sweet white flesh that flakes into soft, fine sheets when cooked. It is a mainstay of British fish-and-chips and the basis of smoked specialities such as finnan haddie and Arbroath smokies.
