Gunpowder, known in Tamil as molaga podi ("chilli powder") and in other South Indian languages as idli podi, milagai podi, chutney podi or kaaram podi, is a dry, coarse, brick-red condiment powder made from roasted lentils, dried red chillies, garlic and seasonings. It is the everyday accompaniment to idli, dosa and other tiffin dishes: a spoonful is mounded on the plate, moistened with sesame or ghee oil, and used as a spicy dip in place of wet chutney.
