Guinea fowl is the meat of the helmeted guineafowl (Numida meleagris), a speckled grey-and-white African game bird domesticated for the table. Leaner and darker-fleshed than chicken, it carries a mild, savoury gaminess — more interesting than chicken, gentler than pheasant — and is prized in French cooking, where it is sold as pintade.
