Guacamole is the mashed-avocado dip of Mexico — ripe avocado crushed to a coarse purée and seasoned with lime juice, salt, chopped white onion, green chilli and fresh coriander. Cool, rich and buttery with a bright citric tang and a gentle chilli warmth, it is eaten as a dip for tortilla chips, a spread and a topping across Mexican and Tex-Mex cooking, and it is distinct from a plain avocado in being a seasoned, acidulated, chunky preparation in its own right.
