Grouper is the firm, moist, thick-flaked white flesh of the big reef fishes of the genus Epinephelus and its relatives — heavy-bodied, large-mouthed ambush predators of the family Epinephelidae. Mild and slightly sweet, with a clean marine flavour and a meaty bite that holds up to any cooking, it is a prized catch from the Gulf of Mexico and the Caribbean to the Mediterranean, where the dusky grouper is a celebrated table fish.
