Grappa
Grappa is an Italian pomace brandy distilled from vinaccia — the grape skins, seeds and stems left behind after winemaking — a fiery, fragrant, usually colourless spirit, grapey and grassy with a peppery bite, traditionally drunk as a digestivo after a meal or stirred into espresso as a caffe corretto.

Fiery, fragrant and lean, young grappa leads with vivid grape skin and a heady violet, floral perfume over fresh-cut stem, grass and green herb, finished with a hot, peppery, slightly bitter pungency. The texture is light and spirituous with a sharp alcohol burn at around 40 to 45 percent, and the finish is dry, grippy and grapey, far leaner and more herbaceous than an oak-aged grape brandy; wood-aged grappa invecchiata softens this with vanilla and a balsamic, woody warmth.
