Goat is the meat of the domestic goat (Capra hircus) — lean, firm, fine-grained muscle with little marbling and a mild, sweetish, gently gamey flavour. Known as chevon from a mature animal and cabrito from a milk-fed kid, it is the most widely eaten red meat on earth, and at its best slow-braised into the curries, birria and stews of the tropics and the Mediterranean.
