Gjetost (also geitost, and known generically as brunost, "brown cheese") is a Norwegian whey cheese made by slowly boiling down whey until its milk sugars caramelize, turning the cheese a fudgy brown. Dense, slightly grainy and sweet, it tastes of caramel and dulce de leche with a tangy, faintly goaty edge, and is eaten in paper-thin slices on bread or waffles — a fixture of the Norwegian breakfast table.
