Old Tom Gin

Old Tom is a historic style of gin that sits between bone-dry London Dry and the malty, full-bodied Dutch genever it descends from — a juniper-forward spirit given a touch of added sugar so it tastes softer, rounder and gently sweet. Once the everyday gin of Victorian London and the defining base of the Tom Collins and the original Martinez, it nearly vanished in the twentieth century before the craft-cocktail revival brought it back.

Softer and rounder than a dry gin, leading with resinous, piney juniper and bright lemon peel but carried on a gentle honeyed sweetness from its light sugaring, with warm coriander, angelica and a faint herbal lift; the finish is fuller and less bitter than London Dry, the alcoholic warmth clean at around 40 to 47 percent, sweeter than dry gin yet drier and more juniper-led than malty genever.
