The Gin Fizz is a tall, effervescent member of the fizz family — a sour of gin, fresh lemon juice and sugar, shaken hard with ice, strained into a tall glass and lengthened with a splash of chilled soda water. It is a clean, refreshing drink: dry and citrus-bright, lightly sweet, with a soft, foamy collar from the hard shake and a gentle sparkle from the soda. A nineteenth-century classic first printed by Jerry Thomas, it became a hometown specialty of New Orleans and one of the most popular American cocktails in the decades around 1900.
