Gin
Juniperus communis · Spirit
4 varieties
A clear spirit distilled with juniper berries above all, plus citrus peel, coriander and angelica. Piney, citrusy, herbal and dry rather than sweet, it is the base of the gin and tonic and the dry martini.
By law juniper must be the predominant flavour for a spirit to be called gin: in the EU, UK and US the category is defined by that single requirement, and everything else — the citrus, coriander, angelica and other botanicals — is at the distiller's discretion.
