Garrotxa is a Catalan pressed goat's-milk cheese capped by a soft, velvety grey-blue natural rind of wild mould. Its bright-white, firm-but-supple paste is mild, milky and gently nutty, with a clean lactic tang and a faint herbal, mushroomy note drawn from the bloom that coats the wheel.
