A garlic scape is the curling, leafless flower stalk that hardneck garlic (Allium sativum var. ophioscorodon) throws up in early summer before the bulb matures. Slender and bright green, it tastes like a milder, greener, more vegetal version of the clove — chive-like and sweet when cooked.
