The garfish (Belone belone), also called the garpike, sea needle or hornfish, is a long, slender, silver-green pelagic fish of the needlefish family (Belonidae), instantly known by its needle-thin body and elongated, beak-like jaws lined with small sharp teeth. Its lean, sweet white flesh is prized in Northern Europe and the Mediterranean — grilled, fried or pickled — but is most famous for one startling trait: when cooked, its bones turn a vivid green.
