Fuzzy melon (Benincasa hispida), also called hairy gourd, mao gua, jointed gourd, Chinese fuzzy squash or moqua, is the young, immature fruit of the same vine that, left to mature, becomes the waxed winter melon. Harvested small and tender while its thin green skin is still covered in a fine coat of downy hairs, it has mild, faintly sweet, watery white flesh with a light cucumber-and-squash flavour, and is a staple summer vegetable of Cantonese home cooking — braised with dried shrimp and glass noodles, stir-fried, or dropped into clear soups.
