Fruit smoothie

A fruit smoothie is a cold, thick drink made by blending whole fresh or frozen fruit — most classically banana, berries and mango — with a liquid such as juice, milk or water and often a spoon of yogurt, into a smooth, pourable purée. Unlike a juice it keeps the whole fruit, pulp and fibre included, and unlike a milkshake it is built on fruit rather than ice cream; the result is fruit-sweet, faintly tangy and full-bodied, drunk very cold through a wide straw as a breakfast, a snack or a health drink.

A chilled, thick pour of banana-berry smoothie: sweet and fruit-forward, with ripe banana giving a creamy body, tart berries and citrus lifting the top, and a gentle yogurt tang underneath; full-bodied and pulpy rather than smooth-and-clear, faintly fibrous on the finish. The flavour shifts entirely with the fruit — a mango or tropical blend reads sweeter and more perfumed, a green smoothie folds a vegetal edge behind the fruit.
