Frog legs (French cuisses de grenouille) are the meaty hind legs of edible frogs, a delicacy in French, Chinese and Southeast Asian cooking and a fixture of the American South. The pale pink-to-white flesh is very lean, fine-grained and tender, with a delicate, faintly sweet flavour close to chicken with a light fishy edge; it takes garlic, butter and herbs beautifully and is most often floured and fried or sautéed quickly to keep it juicy.
