Framboise
Framboise is a clear, unaged raspberry brandy from Alsace in north-eastern France, distilled from a mash of ripe raspberries into a bone-dry, colourless eau-de-vie of intense, perfumed fruit; bottled at around 40 percent alcohol and never sweetened, it captures the whole aroma of the berry with almost none of its sweetness, and should not be confused with the sticky red framboise liqueur that shares its name.

Bone-dry yet extravagantly perfumed, framboise floods the nose with fresh ripe raspberry, jammy berry and a floral, rose-like lift, with a faint green, seedy note and a whisper of kirsch behind it. On the palate the sweetness of the aroma vanishes into a warming, clean, high-proof spirit at around 40 percent, leaving the raspberry perfume ringing on a long dry finish. The texture is light and spirituous with no oak, no colour and no sugar, the whole effect being aroma without weight, the essence of the berry caught in clear brandy.
