The Brown Turkey is the dependable, cool-climate garden fig — a medium-to-large pear-shaped fruit with dull brownish-purple to coppery-mahogany skin that opens to a pale pink-amber, sparsely seeded interior. Its flavour is mild and gently honeyed rather than intense, sweeter and lighter than the jammy Black Mission, and its great virtue is reliability: it is hardy, heavy-bearing and forgiving, which is why it is the fig most often planted against a sunny wall in Britain and the cooler parts of the United States.
