Micro fenugreek (micro methi) is the seedling stage of the fenugreek plant — fenugreek seed sprouted and grown for one to three weeks, then snipped at the soil line as a tender microgreen. Eaten raw as a garnish or salad green, each delicate shoot delivers a concentrated, almost surprising hit of the mature plant's flavour: maple-savoury and warm up front, with a clean, lingering bitter-grassy finish that is far more intense than the size of the seedling suggests.
