Époisses (full name Époisses de Bourgogne) is a soft, washed-rind cow's-milk cheese from the village of Époisses in Burgundy, France. Sold as a small, squat disc in a round wooden box, it has a glistening, sticky orange-brick rind washed with brine and Marc de Bourgogne (a grape-pomace brandy), and a pale, almost runny interior that grows spoonably soft when ripe. It is famously, formidably pungent — one of the most strongly smelling of all French cheeses — yet the paste itself tastes rich, salty, creamy and savoury rather than harsh.
