The emu (Dromaius novaehollandiae) is a large flightless ratite native to Australia, the world's second-tallest living bird after the ostrich. Although classed with poultry, its meat is a deep-red, fine-grained, very lean cut that eats and cooks far more like beef or venison than like chicken.
