El Diablo
El Diablo is a tall, fizzy tequila highball of blanco tequila, crème de cassis and fresh lime, topped with spicy ginger beer and built over ice in a highball glass — a refreshing, blackcurrant-tinged cooler credited to the tiki pioneer Trader Vic in the 1940s. Its deep magenta-red streak of cassis sinking through the pale drink gives it a devilish glow that earned the name.

Deep magenta-red where the cassis blooms through the ice, El Diablo smells of jammy blackcurrant and bright lime over the earthy, vegetal agave of blanco tequila and a warm, peppery ginger lift. On the palate it is fruity and sweet-sour up front — dark-berry cassis sweetness set against sharp lime — with the tequila's earthy agave carrying through the middle and a dry, spicy, effervescent ginger-beer finish at around 11 to 12 percent alcohol in the glass. Long, crisp and refreshing, with just a whisper of bitterness from the ginger.
