Dulse is an edible red seaweed (Palmaria palmata) that grows on cold-water rocky shores of the North Atlantic and North Pacific. Sold dried as deep reddish-purple flakes or whole fronds, it has a chewy-leathery bite and a smoky, savoury, faintly bacon-like sea flavour, eaten as a snack, crumbled over food, or pan-fried until crisp.
