Duck liver is the reddish-brown organ meat (offal) of the domestic duck (Anas platyrhynchos domesticus) — soft, rich and faintly metallic, deeper and gamier in flavour than chicken liver. The ordinary (un-fattened) liver is one of the most nutrient-dense foods in the kitchen and the everyday cousin of the force-fattened liver sold as foie gras.
