The duck leg is the bird's lower limb — the thigh and the drumstick joined at the knee — cut from the domestic duck (Anas platyrhynchos domesticus). It is rich, dark, fatty meat laced with collagen and sinew, far tougher raw than the breast but turning meltingly tender under long, slow cooking, and is the classic cut for the French confit de canard.
