The duck gizzard (French gésier) is the bird's muscular second stomach — a dense, dark-red knot of smooth muscle that grinds food against swallowed grit. Meatier and more richly flavoured than the chicken version, it is the classic salade landaise garnish of southwest France: slow-cooked confit in duck fat, then sliced warm over frisée and walnuts.
