Duck breast is the large pectoral muscle of the duck (Anas platyrhynchos domesticus), cut as a boneless fillet topped by a thick layer of skin and fat. Unlike chicken breast it is deep-red dark meat, tender enough to cook like a steak and served pink, and is the centrepiece of dishes from seared magret to Peking duck.
