Dried lime

Dried lime — known as loomi, limu omani, noomi basra or simply black lime — is a whole lime that has been boiled in brine and then sun-dried until it turns hard, hollow and dark. Intensely sour, musky and faintly fermented, it is the defining souring agent of Persian and Gulf cooking, dropped whole or ground into stews, rice, soups and tea.
